It has come to my attention that I am very good at accumulating jars. That is to say, a lot of my food comes in glass. Mostly tomato sauce and jam. These are versatile ingredients and I believe in them. Today I had to buy mayonnaise which also comes in glass. That is to say, the more expensive of the two comes in glass. The cheaper mayonnaise sold at the village shop comes in plastic which, the more I think of it, does not sit well with me. And it’s not even about climate change, it’s about the idea of whipped eggs in plastic. Apparently, the name mayonnaise has nothing to do with County Mayo or, thankfully, the American medical clinic. It is a Spanish sauce, which gives my childhood and all its sandwich-making a new sophisticated edge. I will concede, however, that ketchup is better in plastic. That is because you need to make the most of ketchup. There are whole rows in refrigerator doors that stand testament to this need. Ketchup in glass is often traumatic. Ask anyone my age who regularly tucked into burgers at family restaurants during the summers. Or don’t. But, anyway, I won’t back down on this. Sometimes you need to be firm about things. Sometimes certainty does have its place in life.
